Many vegans and vegetarians avoid vegetables and rely more on nuts, grains, and beans. While nuts, grains, and beans are good, the secret to vibrant health is found in the greens. A breakfast of hot cereal is always welcome, but in our home all breakfasts start with a large green smoothie. How this might be accomplished in our pantry diving/emergency thriving meal box? My solution is dehydrating like Dr. Schultz and his super food. I don't want to buy a pre-made super food, because many contain wheat grass and barley grass, no-nos with celiacs. Also, I don't know if they have been dehydrated at low temp, as we always include a great portion of our diet as raw.
Our smoothies contain a pound of leafy greens, water, an orange with a bit of the peel, a banana, and 1 c. cherries or blue berries, making 2 quarts. When dehydrated at a low heat and powdered in the blender, it is reduced to about 2 cups. I divide this into 4 portions of 1/2 c. each plus 1 t. spirelina powder and 1.5 t. chia seeds. We usually use flax seeds, but they go rancid if ground. Chia seeds don't need to be ground to be digested so make the perfect addition to my emergency smoothie recipe. To drink it, reconstitute with 16 oz. water. In our family, we would want two of these packets per day to maintain optimum health.
If you have read this far, you are a smoothie nut like me. I admit it doesn't taste as good as a real smoothie. However, it will give me the nutrition and fiber my body desperately needs. I imagine in a bug out situation, excellent nutrition would help one cope and thrive in a more serene manner.
